
We are only two days into the new school year and I am already looking forward to next summer. Don’t get me wrong, I LOVE the autumn. Wool sweaters, crisp fall air, hearty root vegetables – all good things. But these early school-day mornings are tough. Getting up before the sun has never been my thing. Getting up before the sun AND having to dress, feed and get two little girls out the door is a daily challenge.
And to add another layer of excitement to the morning, I am also a hearty breakfast person (a bowl of fruit just won’t do). I need substance. Something to get me going. Knowing that time is limited in the morning, I have gone back to my pre-summer ways of prepping breakfast in advance. Making a frittata, sautéing some greens, braising fruit, cooking up a big pot of grains – all are great ways to bring some nourishing goodness into an otherwise challenging morning.
I have shared a few recipes below that can all be prepped in advance. Most of them in their entirety and only need to be heated up. A few require a bit of morning work but not much. They all make for a deliciously healthy breakfast sure to get you through the morning rush.
