Summer Popsicles: Keeping it Cool AND Healthy

I have heard word that it’s summertime out there.  Not that we would know here is foggy San Francisco.  Maybe it was some wishful thinking on my part that got me going with homemade popsicles earlier this week.  That and an overflowing fruit bowl.

So, this blog post goes out to all of you enjoying (or not) a bit of summer heat.  Five deliciously easy-to-make ideas for keeping it cool AND healthy.

Blend together 1 cup Greek yogurt,  2 bananas and 1 teaspoon vanilla in your food processor or blender.  Add 1/3 cup cocoa powder.  Mix well.  Toss in your strawberries and only pulse for a second or two – long enough to combine all the ingredients but not so long that you lose the texture of the berries.

Pour your ingredients into a popsicle mold or paper cup and put in the freezer long enough for them to set, about 6 hours.

Kitchen Tip:  These creamsicles are wonderfully delicious but also fall on the richer side.  Opt for smaller molds if you can.  A little will go a long way with these guys.

 

 

Blend together 1 1/2 cup mango, 1 cup almond milk and 3 tablespoons natural cane sugar in your food processor or blender.  Gently stir in (no blending necessary) 1/2 cup of kiwi, diced into small pieces.

Pour your ingredients into a popsicle mold or paper cup and put in the freezer long enough for them to set, about 6 hours.

Kitchen Tip:  Try swapping out the almond milk with coconut water for lighter alternative.

 

 

Mix together 6 tablespoons fresh lime juice, 1 cup coconut water, 1 cup 100% white grape juice, 2 tablespoons natural cane sugar and the zest of one lime in a medium-sized mixing bowl.  Stir until the sugar is completely dissolved.

Pour your ingredients into a popsicle mold or paper cup and put in the freezer long enough for them to set, about 6 hours.

 

 

Blend together 2 cups mixed berries (I opted for blueberries & raspberries), 1 cup Greek yogurt and 1/3 cup honey in your food processor or blender.

Kitchen Tip:  Peaches and nectarines work as well.  Go with what you like most.  Any ripe, seasonal fruit will do the trick.

 

 

Blend together 1 1/2 cup coconut water, 1 ripe avocado, 1/2 cup kale, 1 banana, 2 tablespoons honey and 1 kiwi in your food processor or blender.

Pour your ingredients into a popsicle mold or paper cup and put in the freezer long enough for them to set, about 6 hours.
