Shaved Asparagus Salad

This three ingredient salad is the perfect spring side-dish for warm days. It requires nothing but a bunch of asparagus, lemon, and olive oil (with salt/pepper) and a potato peeler.

Ingredients

1 bunch asparagus
Juice from 1 lemon
1 tablespoon olive oil
Sea salt and fresh ground pepper to taste

Steps

  1. Using a potato peeler, shave stalks of asparagus in a medium bowl.
  2. Pour lemon juice, olive oil over the shaved asparagus and sprinkle with sea salt and fresh ground pepper. Massage lightly with your hands until well combined. Taste and add additional lemon juice or salt/pepper as needed.

Serves 4 small salads
