
The other day, I was invited to hop on board a shiny speed boat to tour some of the most exclusive beaches here in the Virgin Islands. Excited for the day-long venture, my sister and I threw together a few on-the-go bites for our trip.
Of course I suggested something with fruit and veggies and thought I’d share this light and refreshing salad that I made up on the whim. It uses the superfood papaya that I’ve been raving about these past few days.
You can make it ahead the night before and pack it up for healthy lunches or snacks. Not to mention, it travels quite well in a sealed container.
Try this for your next lunch, share a bowl at a potluck, or pack it up for an outdoor adventure.
Ingredients
2 cups cucumber, peeled, de-seeded, and cubed into ½ inch pieces
3 cups papaya, cubed into ½ inch pieces
¼ cup red onion, finely chopped
¼ cup cilantro, chopped
¼ cup green onion, thinly chopped
1 tablespoon extra virgin olive oil
Juice from 1 lime
Pinch of sea salt and pepper
Steps
- Toss all of the ingredients together.
- Enjoy.
