
There is something inherently frantic about weekday mornings. No matter what hour I get up, there always seems to be that mad dash out the door.
I am still a long ways away from figuring out the secret to no-stress mornings. But I have made some changes along the way that have dialed down the chaos a bit. The easiest fix was breakfast. A good breakfast really doesn’t need to take up much time. Granola and yogurt, a quick poached egg with leftover veggies, steel-cut oats made the night before. And then there are smoothies – the easiest of all. Pull out the blender, throw in a few ingredients and breakfast is served (with a warm slice of whole wheat toast).
With all the amazing spring berries coming into season, we have been on a bit of a smoothie tear here these last couple weeks. We are having lots of fun trying new combinations. Most work. Some don’t. But they sure do make the mornings a whole lot easier – and much more delicious.
SIMPLE STRAWBERRY SMOOTHIE
1 1/2 cup strawberries, destemmed and halved
1/2 cup celery, roughly chopped
1/2 cup plain yogurt
2 tablespoons honey
5-6 ice cubes
CARROT MANGO SMOOTHIE
1 cup carrots, roughly chopped
1 cup mango, cubed
1 teaspoon ginger, minced
2 cup fresh orange juice
4-5 ice cubes
BANANA AVOCADO SMOOTHIE
1 ripe banana
1 avocado
2 tablespoons fresh lemon juice
1 tablespoon honey
1/2 cup plain yogurt
Steps:
- Combine all ingredients in a blender. Blend until smooth.
Serves 2.
