Delicious Ideas for Healthy Workday Lunches

Lunch can easily be a major pitfall if you are trying to “live healthy” at work. Often squeezed between meetings, forgotten because you have too many things to do, thrown out because your lettuce is bland, or overloaded with grease because you decided to eat take-out, LUNCH can be a meal that holds us back from meeting our goals to eat better.

 

So, what’s the solution?

 

Plan ahead, make it yourself, and add flavor.

 

A few weeks ago, Springer and I participated in an amazing Wellness Wednesday event at Genentech, where we provided tools & tastings to over 100 employees – all around healthy lunches on-the-go. What appeared to be an hour-event, was actually a few fabulous weeks of planning and coordinating with Genentech team members and a local caterer. The goal was to provide folks with an informative, hands-on, and delicious experience to empower them to prepare healthy meals…even on an extremely busy schedule.

During our first brainstorm call with Genentech, we learned that a major influencer for Wellness Wednesday’s was the department’s Senior VP. As a busy and dedicated leader who travelled 28 weeks out of the year, he learned that junk-food fuel was not going to help him grow in his career (or life). He compared himself to a car that was filling up with “just enough” to get him from one destination to another. Sound familiar?

Seeking support and making steady, gradual changes to his diet and exercise, improved his energy, mood, and even helped him to lose over fifty pounds. The most amazing aspect of this story however, is his efforts help his colleagues make similar changes in their lives. Not too long ago, Genentech’s IT department launched an internal campaign, bringing in wellness experts to provide amazing learning opportunities for their team. That’s where we came in.

 

Joining forces with Genentech for their June 29th event, we were in charge of the “food” aspect, but we wanted to do more than show up and give a presentation. As strong believers that people must get their hands on delicious, healthy food in order to make life-lasting changes, we decided to do en educational food demo and tasting. Springer and I designed nine custom recipes in our Eat Life Whole loft and sent them off to J&V
Catering – who created them for the masses. Filled with nutrient-rich ingredients to keep the busy person nourished, satisfied, and energized, we armed each employee with a plate full of food, beautifully designed recipe cards, and an educational presentation around the power of FOOD.

 

Besides being delicious, we designed the menu with 3 requirements: 1) must be simple to prepare; 2) must work for leftovers; and 3) must be affordable.

We also did a few fun videos to help stock a Natural Foods Pantry and Eat Seasonally in the Summer.
