One-up your regular salad with these antioxidant, superfood fixins. There’s a bit of sweet and crunch!

Over the last few weeks, we have been busy here at ELW working with Genentech to get ready for their Wellness Wednesday event.  They planned a full day of activities for their employees – including everything from yoga to tai chi to healthy eating.

And that’s where we came in.

Recognizing the importance of a healthy diet, the folks at Genentech asked us to come and share some of our tips and suggestions for nutritious, packable lunches.  The best part is that they all got to experience a few of our tasty suggestions first-hand.  Working closely with the Genentech team, we planned a menu of delicious, easy-to-make foods, perfect for a packable lunch or picnic.

Check out what we made.  Maybe try a few on your own.

Ingredients:

1 head of romaine lettuce, washed and chopped into 1 ” pieces
4 leaves of lacinto/dino kale, stemmed and cut into thinly sliced ribbons
1/2 cup jicama, cut into 2″ long match sticks
1/4 cup dried cranberries (sweetened with juice not sugar)
1/2 cup sunflower sprouts
1/4 cup coconut flakes (unsweetened, large flakes)
1/4 cup raw pumpkin seeds
pinch of salt & freshly ground pepper

Steps:

  1. Combine all of the ingredients in a large bowl
  2. Using a pair of tongs, toss with 3/4 – 1 cup of dressing
  3. Serve into 4 large bowls and season with salt and pepper. Serve immediately.

Makes 4 large salads.
