Cucumber Ranch Dressing

Enjoy flavorful dressings with any grain or green salad. They make great dips and marinades too!

Over the last few weeks, we have been busy here at ELW working with Genentech to get ready for their Wellness Wednesday event.  They planned a full day of activities for their employees – including everything from yoga to tai chi to healthy eating.

And that’s where we came in.

Recognizing the importance of a healthy diet, the folks at Genentech asked us to come and share some of our tips and suggestions for nutritious, packable lunches.  The best part is that they all got to experience a few of our tasty suggestions first-hand.  Working closely with the Genentech team, we planned a menu of delicious, easy-to-make foods, perfect for a packable lunch or picnic.

Ingredients:

1 tablespoon finely minced shallots
1/2 cup thinly shredded cucumber
3/4 cup greek yogurt
3 tablespoon lemon juice
1/4 teaspoon sea salt
tiny pinch of cayenne pepper
1 tablespoon olive oil
3 tablespoons flat leaf parsley, finely chopped
3 tablespoons chives, finely chopped

Steps:

  1. Wash, peel and grate 1/2 of cucumber using the large holes of a box grater.
  2. In a medium bowl, combine greek yogurt, cucumber, lemon juice, sea salt, and a pinch of cayenne pepper.
  3. Whisk in olive oil.
  4. Once ingredients are thoroughly combined, add the parsley and chives. Season with more salt and cayenne if desired.

Makes ~1 1/3 cup
